Chef Yoshiaki Shimizu is the chef behind Seiju, a Michelin 1-Star restaurant specialising in tempura in Tsukiji, Tokyo, Japan. Takumi Yamamoto’s Shimizu tempura is only available as an omakase — dishes selected by the chef — course.
